Chili lime steak is carne-asada energy — smoky, charred, and bright with lime, perfect sliced into tacos, bowls, or fajitas. It cooks fast and the marinade is one chili lime seasoning plus a squeeze of lime.

This uses Pinche Crack, our chili lime blend (ancho chile, Korean chili, garlic, zesty lime) — lime's built right in.

Method

  1. Marinate. Rub steak with olive oil, lime juice, garlic, and Pinche Crack. Rest 15–30 min (or up to overnight).
  2. Heat. Get a grill, grill pan, or cast iron screaming hot.
  3. Sear. Cook 3–4 min per side for medium-rare (flank/skirt are thin and fast). Don't overcook.
  4. Rest & slice. Rest 5–10 min, then slice thin against the grain.
  5. Finish. Squeeze lime, scatter cilantro.

Total time: 15 minutes (plus marinate). Serves 4.
