Method
- Marinate. Rub steak with olive oil, lime juice, garlic, and Pinche Crack. Rest 15–30 min (or up to overnight).
- Heat. Get a grill, grill pan, or cast iron screaming hot.
- Sear. Cook 3–4 min per side for medium-rare (flank/skirt are thin and fast). Don't overcook.
- Rest & slice. Rest 5–10 min, then slice thin against the grain.
- Finish. Squeeze lime, scatter cilantro.
