Method

  1. Marinate. Combine chicken, olive oil, lemon juice, garlic, Greek Crack (and yogurt if using). Toss to coat. Rest 15 minutes, or up to overnight for deeper flavor.
  2. Heat. Grill, grill pan, or skillet over medium-high, lightly oiled.
  3. Cook. Sear 5–6 minutes per side (thighs) until charred and 165°F internal.
  4. Rest & slice. Rest 5 minutes, then slice against the grain.
  5. Finish. Extra squeeze of lemon and a little chopped parsley or dill.

Total time: 25 minutes (plus marinate). Serves 4.
