- Marinate. Combine chicken, olive oil, lemon juice, garlic, Greek Crack (and yogurt if using). Toss to coat. Rest 15 minutes, or up to overnight for deeper flavor.
- Heat. Grill, grill pan, or skillet over medium-high, lightly oiled.
- Cook. Sear 5–6 minutes per side (thighs) until charred and 165°F internal.
- Rest & slice. Rest 5 minutes, then slice against the grain.
- Finish. Extra squeeze of lemon and a little chopped parsley or dill.
