  2. Skewer. Thread chicken onto skewers.
  3. Cook. Grill: Medium-high, 10–12 min, turning, until charred and 165°F. Pan/grill pan: Same, in batches.
  4. Serve. In warm pita with tzatziki, tomato, and onion, or over rice.
