Cajun Pork Chops (Juicy, Pan-Seared)
Cajun pork chops are the weeknight dinner that punches way above its effort — a smoky, spicy crust on juicy, tender chops, done in 20 minutes in one pan. The whole flavor is one Cajun seasoning.
This uses Dirty South Crack, our Cajun blend (paprika, cayenne, gumbo filé, garlic, white pepper).
Why they're a keeper
- 20 minutes, one pan.
- One seasoning = the smoky crust.
- Juicy and tender when you nail the timing.

Ingredients
Method
- Dry & season. Pat chops dry. Rub with oil, then coat both sides with Dirty South Crack.
- Sear. Heat oil + butter in a skillet over medium-high. Add chops.
- Cook. 4–5 min per side until a dark crust forms and internal temp hits 145°F.
- Rest. Rest 5 minutes (this keeps them juicy), then serve. Finish with lemon and parsley.
Total time: 20 minutes. Serves 4.
Pro tips
- Pull at 145°F — pork is juicy and safe at medium; overcooking dries it out.
- Don't move them while the crust forms.
- Rest before cutting to keep the juices in.
What to serve with them
- Cajun rice or dirty rice.
- Roasted potatoes or mashed.
- Green beans or a crisp slaw.
