Jambalaya is the Louisiana classic that turns one pot into a whole feast — smoky sausage, chicken, shrimp, and rice simmered together with bold Cajun spice. It looks impressive and feeds a crowd, but it's mostly hands-off. The flavor backbone is one Cajun seasoning.

- Brown proteins. Heat oil in a large pot. Brown sausage and chicken; remove.
- Trinity. Cook onion, pepper, and celery 4–5 min, then garlic 1 min.

- Build. Add rice, tomatoes, broth, and the browned sausage and chicken. Bring to a boil.
- Simmer. Cover and cook on low 20 min until rice is tender.
- Shrimp. Stir in shrimp; cook 5 more min until pink. Rest 5 min, fluff, serve.
