- Soak & dry (fresh). Soak cut fries 20–30 min in cold water, then pat bone-dry.
- Season. Toss with oil and 1/2 tsp Szechuan Crack.
- Cook. Oven: 425°F, single layer, 30–35 min, flipping once. Air fryer: 400°F, 15–18 min, shaking halfway.
- Finish. Dust hot fries with the remaining seasoning and salt. Top with green onion and sesame.
Total time: ~35 min oven / ~18 min air fryer. Serves 4.
