  2. Crisp. Heat oil over medium-high. Fry chicken in a single layer until golden and crispy, 6–8 minutes. Remove.
  3. Aromatics. Lower heat; add garlic, ginger, and remaining 1/2 Tbsp seasoning for 30 seconds.
  4. Sauce. Add soy, vinegar, and sugar; simmer 1 minute until glossy.
  5. Toss. Return chicken, toss to coat. Finish with green onion and sesame. Serve over rice.
