This uses Szechuan Crack, made with real Szechuan peppercorns.

Method

  1. Press & coat. Press tofu 15 min, cube, and toss with cornstarch and 1/2 tsp Szechuan Crack.
  2. Crisp. Heat oil over medium-high; fry tofu, turning, until golden and crispy on all sides, 8–10 min. Remove.
  3. Aromatics. Add garlic, ginger, and remaining 1/2 tsp seasoning for 30 seconds.
  4. Sauce. Add soy, vinegar, sugar; simmer 1 minute until glossy.
  5. Toss. Return tofu, coat, finish with green onion and sesame. Serve over rice.

Total time: 20 minutes. Serves 3–4.

  • Press the tofu — drier tofu crisps far better.
  • Cornstarch coat is the key to a crunchy exterior.
  • Don't crowd the pan or it steams.
